Ingredients

4 boneless skinless chicken breasts
¼ cup olive oil
¼ cup. Dijon or whole grain mustard
¼ cup raw honey (optional)
Juice of half a lemon
2 garlic cloves, minced
½ tbsp. paprika
¼ tsp. cayenne pepper
¼ tsp. red pepper flakes
Sea salt and freshly ground black pepper
A few dashes of hot sauce (optional)

Ingredients for the Garlic-Roasted Sweet Potatoes

2 cups sweet potatoes, peeled and cubed
2 garlic cloves, minced;
1 tbsp. olive oil
Sea salt and freshly ground black pepper

Instructions
  1. Whisk all ingredients for chicken marinade in a glass bowl.
  2. Add the chicken breasts to the bowl. Cover and marinate in the refrigerator for 2 to 12 hours.
  3. Preheat your oven to 425 F.
  4. In a bowl, combine all the ingredients for the sweet potatoes and toss until everything is well combined.
  5. Place the chicken breasts in a baking dish, and add the sweet potatoes all around them.
  6. Bake in the oven for 30 to 40 minutes, or until the chicken is no longer pink and the sweet potatoes are soft.
