Green Beans and Tomatoes
Green Beans and Tomatoes

Yield: 6 servings


1 lb green beans, washed, trimmed and sliced (or not)
2 14.5 oz cans diced tomatoes or 4 fresh tomatoes,
      peeled and diced
½ large onion, chopped
2 cloves garlic, minced or sliced
2 Tbsp lime juice
splash or rice wine vinegar
salt & pepper to taste
(optional) 2 Tbsp butter


  1. Put beans in a large pan, add salt, pepper, garlic, lime juice. Cover with water, bring to a boil. Cover, reduce heat, and simmer.
  2. If using fresh tomatoes simmer 30 min., then add tomatoes, stir and continue to simmer until beans are tender. If using canned tomatoes, simmer the beans until tender then add the tomatoes and stir.
  3. Add splash of rice wine vinegar, stir taste and adjust seasonings.
  4. Add butter and simmer until butter has melted, and serve.
