Herb Rubbed Sirloin Tip Roast
Herb Rubbed Sirloin Tip Roast

Yield: 6 servings


Rub: 1¼ Tbsp paprika
1 Tbsp Kosher salt
1 tsp garlic powder
½ tsp ground black pepper
½ tsp onion powder
½ ground cayenne pepper
½ dried oregano
½ dried thyme
     Note:Adjust quantities of rub to taste.

2 Tbsp EVOO (olive oil)
1 (3-pound) sirloin tip roast

  1. Rub: Combine herbs and spices in a jar. Cover and shake to combine well. Transfer into a gallon plastic zipper bag. Rub the olive oil into the roast and put it in the bag with the rub. Shake and turn the bag until the meat is covered with the rub on all sides. Massage the rub into the meat.
  2. Roast: Preheat oven to 400°. Line baking pan with aluminum foil.
  3. Place roast in prepared pan and bake for 15 - 20 min. Reduce heat to 300° and continue baking until the internal temperature reaches 140°. Remove from oven and place a foil tent over roast to maintain heat. Let it rest 15 min. before carving.
