1½ C mashed bananas (3 large bananas)
½ C whole milk
½ C vanilla-flavored yogurt
1 large egg
1 tsp vanilla
2 C all-purpose flour
2 tsp baking powder
½ tsp baking soda
1 C granulated sugar
½ tsp salt
½ tsp ground cinnamon
2 C grated zucchini

  1. Preheat oven to 350°F. Grease 9"X5" loaf pan
  2. In a large mixing bowl, mash the bananas, Whisk in the milk, yogurt, egg, and vanilla.
  3. In separate bowl, combine the flour, baking powder & soda, sugar, salt and cinnamon.
  4. Gradually stir the dry ingredients into the wet ingredients. Stir in the grated zucchini.
  5. Pour the batter into the prepared pan, spreading evenly. Bake at 350° for 60 min, or until a toothpic stuck in the middle comes out clean.
