Citrus Cabbage Slaw
Citrus Cabbage Slaw

Yield: 4 servings


¾ C mandarin oranges
½ C cauliflowerets
½ C unsweetened pineapple chunks
¼ C chopped green pepper
1/3 C sugar or substitute
2 Tbsp EVOO (Olive Oil)
1 Tbsp juice from fruit
1 tsp finely chopped onion
½ prepared mustard
salt to taste


  1. Drain the canned mandarin oranges and pineapple chunks, reserving some of the juice.
  2. In a large bowl, toss cabbage, oranges, cauliflower, peineapple and green pepper.
  3. In a small bowl, combine the remaining ingredients. Stir into cabbage mixture.
  4. Cover and refrigerate approximately 2 hours before serving. Toss just before serving; serve with a slotted spoon.
