Yield: 2 servings


1 head cauliflower
2 Tbsp EVOO or (Tuscan herb)
1 head cauliflower
1½ C Parmesan, shredded
¼ tsp sea salt
¼ tsp black pepper
1 handful fresh herbs rosemary, sage, oregano, thyme
½ C tomato sauce
¼ C ricotta cheese
¼ tsp Garlic & Herb seasoning


  1. Preheat oven to 400 degrees F. Prepare small baking sheet.
  2. Place cauliflower core side down on a cutting board. Slice into 1" thick steaks, the ends will fall apart into florets (reserve for another dish). You should get 4 1" steaks.
  3. Combine olive oil, Parmesan, salt, pepper, and fresh herbs. Spread mixture over both sides of cauliflower. Place steaks on prepared baking sheet.
  4. Bake 15 min on one side, turn and cook an additional 10-15 min until nicely browned.
