(chicken, chicken stock, tomatoes, peas, rice )
Yield: 4 servings
1¼ C chicken stock
¼ tsp garlic, minced
1½ tsp basil
1 C stewed tomatoes
¾ C uncooked rice
2 C chicken
1 C frozen peas
hot pepper sauce to taste
- Heat the stock, garlic, basil, and tomatoes in 3-quart saucepan over medium heat to a boil.
- Stir in rice. Reduce heat to low.
- Cover and cook 30 min stiring occasionally.
- Stir chicken, peas, and hot pepper sauce. Cover and cook an additional 10 minutes, or until rice is done.
