Yield: 4 servings


1¼ C chicken stock
¼ tsp garlic, minced
1½ tsp basil
1 C stewed tomatoes
¾ C uncooked rice
2 C chicken
1 C frozen peas
hot pepper sauce to taste


  1. Heat the stock, garlic, basil, and tomatoes in 3-quart saucepan over medium heat to a boil.
  2. Stir in rice. Reduce heat to low.
  3. Cover and cook 30 min stiring occasionally.
  4. Stir chicken, peas, and hot pepper sauce. Cover and cook an additional 10 minutes, or until rice is done.
