Yield: 6 servings


½ large onion, diced
¼ C butter
3 (5 oz) cans chicken chunks
½ pint sour cream or Greek yogurt
½ can cream of chicken & mushroom soup
3 C shredded Cheddar cheese
½ (8-oz) pkg cooked egg noodles
2 oz Ritz crackers, crushed


  1. Preheat over to 350°F.
  2. In medium skillet, fry onion in butter until softened. Pour into 9 X 6-inch baking dish.
  3. In large bowl, combine chicken, sour cream, and soup. Stir in 2 cups of cheese. Stir in noodles. Pour mixture over onions.
  4. Top with curmbled crackers and remaining cheddar.
  5. Bake 30 min or until top is golden.
Add green chiles and/or black olives and/or capers.
