Chicken Noodle CasserolePat Tyler
(chicken, cheese, yogurt, noodles)
Yield: 6 servings
½ large onion, diced
¼ C butter
3 (5 oz) cans chicken chunks
½ pint sour cream or Greek yogurt
½ can cream of chicken & mushroom soup
3 C shredded Cheddar cheese
½ (8-oz) pkg cooked egg noodles
2 oz Ritz crackers, crushed
- Preheat over to 350°F.
- In medium skillet, fry onion in butter until softened. Pour into 9 X 6-inch baking dish.
- In large bowl, combine chicken, sour cream, and soup. Stir in 2 cups of cheese. Stir in noodles. Pour mixture over onions.
- Top with curmbled crackers and remaining cheddar.
- Bake 30 min or until top is golden.
Add green chiles and/or black olives and/or capers.
