Bacon wrapped Chicken Bites

Yield: 16 bite-size pieces


8 chicken tenders or breast cutlets, flattened
6-ounces cream cheese, softened
1 jalapeņo pepper, seeded and finely chopped
16 slices bacon
16 round toothpicks


  1. Preheat oven to 400° F.
  2. Pound tenders flat with meat mallet. Cut in half, crosswise.
  3. Top each piece of chicken with 1 tsp cream cheese spread flat and ¼ tsp chopped jalapeņo.
  4. Roll each filling-covered chicken piece and wrap with 1 slice of bacon, securing with a toothpick.
  5. Transfer to baking sheet and place in over for 20 min. Be sure bacon is fully cooked. (May be prepared and refrigerated ahead of time.) If using outdoor grill, Grill for 8 to 10 minutes, turning once.
Note: You can parboil the bacon prior to wrapping the chicken bites to make it bake more quickly and evenly.
