Basic Chicken CroquettesAll Recipes
Yield: 4 servings
3 C cooked, finely chopped chicken
1½ C seasoned dry bread crumbs
2 eggs, lightly beaten
2 C sauteed onion
1 Tbsp chopped parsley
1 tsp salt
½ tsp black pepper
- Combine chicken, bread crumbs, eggs, and onion in large bowl. Mix well. Check consistancy. If too dry add more egg or other liquid.
- Add parsley, salt and pepper to taste.
- Form into small patties.
- Heat oil in large skillet over medium heat. Fry patties until golden brown.
