Fresh Cranberry Compote

Yield: 2 Cups


½ lb fresh cranberries
1 Tbsp orange zest
1 tsp lemon zest
¼ C orange juice
3 Tbsp fresh lemon juice
½ C sugar
1 tsp pure vanilla extract
2 C water
3 Tbsp cornstarch


  1. Put cranberries, orange and lemon zest, orange and lemon juice, sugar, vanilla and 1½ cups water in a medium-size nonreactive saucepan over medium-high heat. Bring to a boil and cook for 8 minutes.
  2. Dissolve the cornstarch in the remaining ½ cup of water and add to the pan. Reduce heat to medium, then stir constantly until the mixture thickens, about 2 minutes.
  3. Remove from heat and cool completely.
