Cranberry-Blackberry RelishBobby Flay
Yield: 2 Cups +
Ingredients2 Tbsp grape seed oil (or other flavorless veg. oil)
1 onion, finely chopped
1 jalapeņo, seeded and finely chopped
1 Tbsp freshly grated ginger
1½ C fresh orange juice
½ C sugar
1 lb bag fresh cranberries, divided
1 pint frest blackberries, halved
Honey (to taste)
2 Tbsp orange zest
2 Tbsp chopped fresh flat-leaf parsley
Salt and freshly ground black pepper
- Heat the oil in a medium saucepan over medium heat. Add the onions and jalapeņo and cook until soft. Add ginger and cook 1 minute.
- Add the orange juice, sugar, and half the cranberries. Cook, stirring occasionally, until the berries pop and are soft.
- Add remaining cranberries and cook 1 minute. Remove from heat. Add blackberries, honey to taste, oranze zest and parsley. Season with salt and pepper.
- Remove from heat and cool completely.
