Raw Pecans


  1. Spread pecans on a cookie sheet or in a shallow baking pan in one layer. Toast in a 275° oven for 20 or 30 minutes, stirring occasionally, or until browned and you begin to smell the pecan aroma.
  2. Or ... You can roast them more quickly at 300° to 350°, but be very vigilant, because they can burn quickly.
  3. If you need only a few pecans, you can toast them in a skillet over medium heat, but stir and toss them frequently and watch them carefully.
  4. If you're roasting the pecans for a snack, you can toss them with a little oil or butter before toasting, or add flavorings, spices or herbs such as Worcestershire sauce, cayenne, or rosemary.
