Mango-Pineapple-Strawberry PieLee Elsesser

1 baked 9" pie crust
2 C diced mango
1 C diced pineapple
2 C diced strawberries
1 1/3 C sugar (divided)
¼ C cornstarch
¼ C all-purpose flour
¼ C ground Macadamia nuts
¼ C butter, chilled in small pieces
1/3 C sweetened coconut
- Preheat oven to 350°.
- In large bowl, combine the mango, pineapple, and strawberries, 1 C of sugar, and the cornstarch. Stir to mix and transfer to pie crust.
- In smaller bowl, combine the flour, macadamia nuts and sugar and mix. Cut the butter into the mixture.
- Sprinkle this streusel topping over the pie and follow with the coconut.
- Bake for 35 minutes.
- Serve warm with ice cream or whipped cream.
