1 baked 9" pie crust
2 C diced mango
1 C diced pineapple
2 C diced strawberries
1 1/3 C sugar (divided)
¼ C cornstarch
¼ C all-purpose flour
¼ C ground Macadamia nuts
¼ C butter, chilled in small pieces
1/3 C sweetened coconut


  1. Preheat oven to 350°.
  2. In large bowl, combine the mango, pineapple, and strawberries, 1 C of sugar, and the cornstarch. Stir to mix and transfer to pie crust.
  3. In smaller bowl, combine the flour, macadamia nuts and sugar and mix. Cut the butter into the mixture.
  4. Sprinkle this streusel topping over the pie and follow with the coconut.
  5. Bake for 35 minutes.
  6. Serve warm with ice cream or whipped cream.
