Yield: 4 servings


1 (8 oz) pkg bow tie pasta
½ lb prosciutto, sliced (if unavailable, substitute ham)
2 C heavy cream
1½ C freshly grated Parmesan cheese
8 oz frozen peas
salt to taste
½ C freshly grated Parmesan cheese


  1. Cook pasta until al dente, about 8-10 min; drain.
  2. Lightly grease a skillet with cooking spray. Cook prosciutto in skillet over medium heat until just brown, 3-5 min. Remove from heat, drain excess fat, and set prosciutto aside on paper towels.
  3. Meanwhile, heat the cream in a saucepan over medium-low heat. Slowly stir in 1½ C Parmesan cheese in small amounts. When all the cheese has been melted, stir in the pease and prosciutto. Allow to heat for 2 min more.
  4. Pour over drained pasta and toss lightly.
  5. Season with salt to taste and sprinkle with ½ C Parmesan cheese.
