Italian Tuna & Pasta Salad

Yield: 4 servings

Salad Ingredients

2 C bow tie or spiral pasta ,cooked
7 oz tuna, drained & flaked
2 oz cheddar cheese, diced ¼ inch
1 C cherry tomatoes, halved
¼ C red onion, thinly sliced
¼ C celery, thinly sliced
¾ C steameed broccoli flowerettes
&frec12; C artichoke hearts
¼ C parsley, chopped

Salad Instructions:
  1. Combine salad ingredients in large bowl. Pour dressing over all and toss to mix. Chill at least 1 hour.
Dressing Ingredients

3 Tbsp red wine vinegar
1 clove garlic, minced
1 tsp dried basil
½ tsp salt
¼ tsp sugar
Freshly ground pepper to taste
4 tsp olive oil (EVOO)

Dressing Instructions:
  1. Place dressing ingredients in small container with tightly fitting lid. Shake thoroughly to mix.
