Tangy Cucumber & Tomato Salad
Tangy Cucumber & Tomato Salad

Yield: 4 servings


1 small cucumber, thinly sliced
1 tsp salt, divided
1 medium tomato, chopped
1 medium onion, chopped
1 2¼ can sliced olives
1 oz cider vinegar
1 Tbsp EVOO (Olive Oil)
2 tsp honey
¼ tsp celery salt
¼ tsp dried basil
¼ tsp ground mustard
¼ tsp garlic powder
¼ tsp dried oregano
dash cayenne pepper


  1. Place cucumbers in a strainer, sprinkle with ½ the salt and toss. Let stand for 30 min. Rinse and drain well. Place in a large bowl. Add tomatoes, onion, and olive slices.
  2. In a small bowl, whisk together the remaining ingredients. pour over cucumber mixture and toss.
  3. Cover and refrigerate several hours before serving. Toss just before serving; serve with a slotted spoon.
