Apple Salad with Toasted WalnutsBobby Flay

Yield: 8 servings
6 apples (Granny Smith, Gala, Fuji) any or a combination
2 C baby spinach
2 heads endive, thinly sliced
1 C toasted coarsly chopped walnuts
¾ pound blue cheese, crumbled
Freshly ground black pepper
Pomegranate vinaigrette for serving
- Prepare apples by leavving skin on, remove cores and cut into ½-inch dice.
- Combine apples, spinach, endive, walnuts and blue cheese in a large bowl.
- Add pomegranate vinaigrette and toss to coat.
- Season with salt and pepper to taste.
