Chimichurri Sauce

This is a great condiment for beef. Yield: 2¼+ Cups


2 C lightly packed chopped parsley
     (flat leaf Italian if possible)
3 to 5 cloves garlic, minced
1 tsp salt
½ tsp freshly ground pepper
½ tsp chili pepper flakes
2 Tbsp fresh oregano leaves
2 Tbsp challot or onion, minced
¾ C EVOO (olive oil)
3 Tbsp sherry wine vinegar or red wine vinegar
3 Tbsp lemon juice


  1. Place all ingredients in blender or food processor and pulse until well chopped, but not pureed.
  2. Store in air-tight container. Refrigerate if not using immediately.
