Margarita Grilled Shrimp
Margarita Grilled Shrimp

1 lb shrimp, peeled and deveined
2 cloves garlic, minced
2 Tbsp lime juice
3 Tbsp olive oil (EVOO)
2 tsp tequila
3 Tbsp fresh chopped cilantro
¼ ground red pepper
¼ tsp salt
4 bamboo skewers, soaked in water 20 min.

Note: The shrimp can be marinated up to 3 hours before grilling. The amount of red pepper used can be adjusted according to taste. This marinade is also good on chicken.


  1. Combine shrimp, garlic, lime juice, olive oil, tequila, cilantro, red pepper, and salt in a bowl; toss to combine; refrigerate 30 min.
  2. Preheat an outdoor grill for high heat and lightly oil grate. Drain the marinade from the shrimp and discard; thread the shrimp on the skewers.
  3. Cook on preheated grill until the shrimp turns pink, 2 - 3 minutes per side.
