Margarita Grilled ShrimpRecipe Credit

1 lb shrimp, peeled and deveined
2 cloves garlic, minced
2 Tbsp lime juice
3 Tbsp olive oil (EVOO)
2 tsp tequila
3 Tbsp fresh chopped cilantro
¼ ground red pepper
¼ tsp salt
4 bamboo skewers, soaked in water 20 min.
Note: The shrimp can be marinated up to 3 hours before grilling. The amount of red pepper used can be adjusted according to taste. This marinade is also good on chicken.
- Combine shrimp, garlic, lime juice, olive oil, tequila, cilantro, red pepper, and salt in a bowl; toss to combine; refrigerate 30 min.
- Preheat an outdoor grill for high heat and lightly oil grate. Drain the marinade from the shrimp and discard; thread the shrimp on the skewers.
- Cook on preheated grill until the shrimp turns pink, 2 - 3 minutes per side.
