Herb Crusted Shrimp

Yield: 4 servings


¼ C chopped fresh basil
¼ C chopped fresh mint
¼ C chopped fresh parsley
¼ C chopped fresh cilantro
2 cloves garlic, minced
1 lemon, zested
2 Tbsp fresh lemon juice
1 Tbsp olive oil
½ tsp salt
¼ tsp ground black pepper
1 ½ lb large shrimp, peeled and deveined


  1. Preheat oven to 450°F. Coat baking sheet with nonstick spray.
  2. Combine the basil, mint, parsley, cilantro, garlic, lemon zest and juice, oil salt and pepper in a bowl.
  3. Add shrimp and toss to coat.
  4. Arrange shrimp in single layer on a baking sheet.
  5. Bake the shrimp until opaque and cooked through, about 6 min.
  6. Garnish with lemon wedges and serve immediately.
