Yield: 3 servings


2 zucchini squash, thinly sliced
2 carrots, peeled and thinly sliced
Olive oil
Salt and Pepper


  1. Heat a grill pan over medium heat. Coat the bottom of the pan with olive oil.
  2. Add the sliced squash and carrots to the pan and grill until they become slightly tender
  3. Remove the vegetables from the heat and season with salt and pepper immediately.
