Citrus Dressings
Citrus Dressing

Yield: about ½ cup +
Ingredients

1 tsp lemon zest
2 Tbsp freshly squeezed lemon juice
2 Tbsp freshly squeezed orange juice
1 Tbsp Dijon mustard
1 tsp honey, plus more to taste
¼ tsp fresh thyme leaves, chopped
¼ tsp fine salt
¼ cup extra-virgin olive oil

Instructions
  1. Combine all ingredients except oil. Whisk to blend well.
  2. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth, slightly thick dressing.
Citrus Vinaigrette
Yield: about ¾ cup

2 Tbsp lime juice
1 tsp Dijon mustard
¼ tsp finely grated lime zest
¼ C grape seed oil
¼ C olive oil

Instructions
  1. Combine all ingredients except oil. Whisk to blend well.
  2. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth, slightly thick dressing.
