This is an excellent sauce for pork loin or poultry dishes.

Ingredients

1 8-oz pkg mushrooms or several portobello mushrooms, thinly sliced
3 Tbsp onion, diced
2 Tbsp unsalted butter
3 garlic cloves, minced
2 Tbsp white wine
splash of rice vinegar
1 C chicken broth
¼ C creme fraiche or sour cream
2 Tbsp cream cheese
2 Tbsp Dijon mustard
2 Tbsp heavy cream if needed for moisture
3 Tbspflat-leaf parsley or cilantro, chopped
olive oil as needed

Instructions
  1. Melt butter in fry pan. Sauté onions until translucent. Add mushrooms and sauté. Add olive oil if needed.
  2. Add garlic, wine and vinegar and continue cooking. Mix thoroughly and let liquids partially evaporate.
  3. Add chicken broth and continue cooking. Reduce the chicken broth by about 2 thirds.
  4. Add creme fraiche, cream cheese, and mustard. Stir until cheeses have melted and combined into the sauce.
  5. Add the parsley and serve.
  6. Note: This may be prepared in advance and reheated at serving time. Add the cream if needed for additional moisture.
