Ginger and Spice Pecan Cake

Ingredients

2 C sifted flour
1 C granulated sugar
1 Tbsp baking powder
1 tsp salt
¾ tsp baking soda
¾ tsp ground cloves
1 tsp cinnamon
½ ground ginger
⅔ C vegetable oil
1½ C hot water
1 C brown sugar
2 eggs
1 C milk or buttermilk
½ C molasses
1 C chopped pecans
1 C raisins

Instructions

  1. Preheat oven to 350°
  2. Sift together flour, granulated sugar, baking powder, salt, soda, cloves, cinnamon, and ginger. Set aside.
  3. In large bowl, cream together oil, hot water, and brown sugar; add eggs, milk, and molasses; beat thoroughly.
  4. Add dry ingredients to creamed mixture; blend thoroughly. Stir in pecans and raisins.
  5. Bake in a well-greased 9X13X2-inch pan, or 2 8X8X2-inch pans at 350° for 45-50 minutes or until center of cake is firm. Cool 10 minutes.
