Yield: 8 servings

Ingredients

6 apples (Granny Smith, Gala, Fuji) any or a combination
2 C baby spinach
2 heads endive, thinly sliced
1 C toasted coarsly chopped walnuts
¾ pound blue cheese, crumbled
Salt
Freshly ground black pepper
Pomegranate vinaigrette for serving

Instructions

  1. Prepare apples by leavving skin on, remove cores and cut into ½-inch dice.
  2. Combine apples, spinach, endive, walnuts and blue cheese in a large bowl.
  3. Add pomegranate vinaigrette and toss to coat.
  4. Season with salt and pepper to taste.
