Ingredients

Dipping Sauce

¼ C mayonaise
¼ C sour cream / Greek yogurt
¼ C freshly squeezed lime juice
3 tsp chili powder
1 tsp smoked paprika
¼ tsp Cayenne
½ tsp garlic powder
½ tsp cumin

Other ingredients
Lime Butter with Mint
4 ears of fresh corn on the cob
Cotija cheese - It adds a sharp, salty flavor and creamy texture.
Cilantro
Salt

Instructions
  1. Shuck corn. See detailed instructions on Web site for grilling.
  2. Make lime butter, or remove from refrigerator and melt.
  3. Mix dipping sauce ingredients together and set aside.
  4. When corn is done, drizzle with lime butter, then slather dipping sause on all sides
  5. Sprinkle with the cheese, cilantro and salt.
  6. Serve.
