Potato Pancakes
Potato Pancakes Made with shredded dehydrated hash brown potatoes

Yield: 2 servings
Ingredients

1 C dryed hash brown potatoes
1 C boiling water
2 Tbsp flour
1 egg
2 Tbsp chopped onion
Optional: Ham, bacon, vegetables, etc.

Instructions
  1. Measure dehydrated potatoes into bowl. Pour boiling water over them and let sit for at least 12 minutes. Of follow package directions if different. This yields about 2 cups of potatoes.
  2. Put flour and egg into small bowl. Whip with a fork until thoroughly mixed.
  3. Heat frying pan with small amount of oil.
  4. Add chopped onion to potatoes.
  5. This is where you can add additional ingredients such as breakfast meat, additional vegetables, etc. If adding optional ingredients, add more egg/flour mixture to bind the ingreditents together.
  6. Spoon the potato mixture into hot frying pan. This recipe makes 4 small to medium patties. Cook on medium-high heat until well browned.
  7. Serve imediately or keep warm in oven.
